It’s quite a shame that I won’t be able to sport a sombrero, tilt my head back and let the queso flow in honor of Cinco de Mayo falling on a Taco Tuesday. And while I’ll do my best whipping up some enchiladas and tomatillo salsa, it’s just not the same as sitting in a colorful booth with friends and family, endless baskets of chips and hot plates.
